Beetroot Soup


  • 1 tsp cumin seeds

  • 1 tsp grounded coriander seeds

  • a bit of grated ginger & turmeric root

  • 3 tomatoes

  • 4 big beetroots, chopped

  • 1/2 liter of water

  • fresh squeezed lemon juice according to your taste

  • Salt & Long Pepper

  • Optional toppings: sprouts, roasted seeds, coconut cream, lemon zest


Roast the cumin and then add the 3 chopped tomatoes to it. Add the grated ginger and turmeric root. Add the grounded coriander seeds and roast everything. Add the beetroots and 1/2 litre of hot water. Bring everything to boil until the beetroots are soft. Blend everything and season the soup with salt and Long Pepper. At the end add the lemon juice to your taste.
